Legend claims that during 1920, Bhupinder Singh, was adamant that his cricket team would win over a touring English team. To gain the upper hand, he organized a splendid party on the eve of the match, where he presented his guests the legendary Patiala pegs. These were famously substantial four-finger whisky servings, traditionally measured from pinky to index finger. Predictably, the English players overindulged, leaving them terribly hungover and, consequently, vanquished the following day. Thus, the myth of the Patiala peg came to be.
This inspired spin on the Old Fashioned cocktail takes its cue from Singh's beverage. At the restaurant, we offer it from a custom-made large-format bottle, but we've modified the recipe to make it easier for a domestic setting.
Makes 1 litre, enough for 10-12 drinks.
Place everything in a sizeable jug. Add 130g water, stir until fully incorporated, then transfer it in the refrigerator. You can store it for up to a few weeks.
When ready to drink, dispense approximately 90ml of the infused whisky into a old fashioned glass filled with ice (preferably one large cube). Drink promptly. To honour tradition, you could use the four-finger measure for authenticity.
